- 1 cup panko breadcrumbs
- 1 egg
- 0.5 cup all-purpose flour
- 2 tablespoons olive oil
- 1 onion
- 1 carrot
- 2 cloves garlic
- 2 tablespoons curry powder
- 1 cup coconut milk
- 0.5 cup chicken broth
- 2 tablespoons soy sauce
- 1 teaspoon sugar
- salt — to taste
- pepper — to taste
- 4 cups cooked rice

Slice each chicken breast into two thinner pieces. Season with salt and pepper.
