- 400 g shrimp
- 2 cups jasmine rice
- 1 cup pineapple chunks
- 1 yellow onion
- 1 green bell pepper
- 1/2 cup cashews
- 3 cloves garlic
- 2 green onions
- 1 tablespoon curry powder
- 3 tablespoons soy sauce
- 1 tablespoon fish sauce
- 2 tablespoons vegetable oil
- 1 lime
- 1/4 cup cilantro

Cook jasmine rice according to package instructions and let cool slightly.

Peel and devein shrimp, then pat dry with a paper towel.

Dice yellow onion and green bell pepper; mince garlic.

In a large skillet, heat vegetable oil over medium-high heat. Add shrimp and cook until pink, about 3 minutes. Remove shrimp and set aside.
