Ingredients

- 2 can chickpeas
- 1 can coconut milk
- 1 can diced tomatoes
- 1 onion
- 3 clove garlic
- 1 tablespoon ginger
- 2 tablespoon curry powder
- 2 tablespoon olive oil
- 2 cup spinach
- salt — to taste
- black pepper — to taste
- 1 cup basmati rice
- 2 cup water
- cilantro — to taste
Instructions

Rinse the basmati rice under cold water until the water runs clear.

In a medium pot, combine the rice with 2 cups of water and a pinch of salt.

Bring to a boil, then reduce the heat to low, cover, and simmer for 15 minutes or until water is absorbed.

While the rice is cooking, finely chop the onion, mince the garlic, and grate the ginger.
