Ingredients

For 4 servings

  • 8 eggs
  • 2 cups black beans
  • 1 red bell pepper
  • 1 green bell pepper
  • 1 onion
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 cup cheddar cheese
  • 0.25 cup fresh cilantro

  3. 3

Dice the red bell pepper, green bell pepper, and onion.

  9. 9

Transfer the skillet to the preheated oven and bake for 15-20 minutes, or until the frittata is set and slightly golden.

  10. 10

Remove from oven, let it cool slightly, and garnish with fresh cilantro before serving.
