Ingredients

For 4 servings

  • 2 cup rolled oats
  • 1 cup dried lentils
  • 4 cup spinach
  • 1 onion
  • 2 clove garlic
  • 2 tablespoon vegetable oil
  • 5 cup water
  • 1 vegetable stock cube
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • salt — to taste
  • black pepper — to taste

Instructions

  1. 1

Rinse the lentils under cold water and set aside.

  2. 2

In a large pot, heat vegetable oil over medium heat.

  3. 3

Chop the onion and mince the garlic, then add them to the pot. Sauté for 2-3 minutes until the onion becomes translucent.

  4. 4

Add the cumin and paprika, stirring for another minute until fragrant.

  5. 5

Add the rinsed lentils, rolled oats, and 4 cups of water. Stir in the vegetable stock cube and bring to a boil.

  6. 6

Once boiling, reduce the heat to low and let it simmer for about 10 minutes, stirring occasionally.

  7. 7

Add the spinach to the pot and cook for another 2-3 minutes until it wilts. Add additional water if needed to achieve the desired consistency.

  8. 8

Season with salt and black pepper to taste before serving.
