  • 2 chicken breast
  • 1 lemon
  • 2 tablespoon olive oil
  • 6 cups mixed salad greens
  • 1 cucumber
  • 1 cup cherry tomatoes
  • 0.5 red onion
  • 2 tablespoon parsley
  • salt — to taste
  • black pepper — to taste

    Juice the lemon and set aside the juice.

    In a bowl, mix the lemon juice, olive oil, salt, and black pepper to create a marinade.
