Ingredients

- 1.5 kg whole chicken
- 1 lemon
- 3 tablespoon extra-virgin olive oil
- 4 clove garlic
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- salt — to taste
- black pepper — to taste
- 500 g potato
- 300 g carrot
- 2 onion
- 250 g broccoli

Preheat oven to 200°C (400°F).

Rinse the chicken under cold water and pat dry with paper towels.

Zest the lemon and then halve it, setting aside one half.

In a small bowl, mix the lemon zest, 2 tablespoons of olive oil, minced garlic, dried thyme, dried rosemary, salt, and black pepper.

Rub the herb mixture all over the chicken, including under the skin.

Place the chicken in a roasting pan and squeeze the juice of the lemon half inside the cavity, then place the squeezed lemon half inside as well.

Peel and cut the potatoes and carrots into chunks, and quarter the onions.

Toss the potatoes, carrots, onions, and broccoli with 1 tablespoon of olive oil, salt, and pepper.

Arrange the vegetables around the chicken in the roasting pan.

Roast in the preheated oven for 1 hour to 1 hour 15 minutes, or until the chicken is cooked through and the juices run clear (internal temperature should reach 75°C or 165°F).
