Ingredients

For 1 servings

  • 70 g bread
  • 2 egg
  • 60 ml milk
  • 60 g commercially fully cooked ham
  • 25 g cheddar cheese
  • 100 g tomato
  • 2.5 ml olive oil
  • 0.25 g black pepper

Instructions

  1. 1

Cut the bread into roughly 2 cm cubes, dice the ready-to-eat ham and tomato, and finely dice the cheddar. Lightly coat a wide, shallow 1.2-litre microwave-safe bowl with the olive oil.

  2. 2

Crack the eggs into the bowl and whisk with the milk and black pepper. Fold in the bread, ham, tomato and cheddar, pressing the bread into the egg mixture. Let it absorb the custard for 2 minutes.

  3. 3

Cover with a vented microwave-safe lid. Using a 1000-watt microwave at 70% power, cook for 3 minutes. Carefully lift the lid away from your face, rotate the bowl half a turn and gently fold the firmer outer portions toward the centre with a fork.

  4. 4

Cover and microwave at 70% power for another 2 minutes. Check the centre and several other spots with a food thermometer. If any spot is below 165°F/74°C, continue at 70% power in 30-second intervals, rotating between intervals, until all checked areas reach that temperature. The custard should be softly set, with no liquid egg.

  5. 5

Leave covered for 3 minutes, then check that the centre has reached at least 165°F/74°C before eating. If needed, heat again in 30-second intervals at 70% power and repeat the covered standing time. Keep perishable ingredients refrigerated at or below 40°F/4°C until preparation, and refrigerate any leftovers within 2 hours.
