Ingredients

For 4 servings

  • 2 cups black beans
  • 1 cup quinoa
  • 0.5 cup breadcrumbs
  • 1 egg
  • 1 onion
  • 2 cloves garlic
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 teaspoon cumin
  • 0.5 teaspoon paprika
  • 1 avocado
  • 1 cup Greek yogurt
  • 2 tablespoons lime juice
  • 0.25 cup cilantro

Instructions

  1. 1

Rinse and cook quinoa according to package instructions.

  2. 2

Drain and rinse black beans, then mash them in a large bowl using a fork or potato masher.

  3. 3

Finely dice the onion and mince the garlic.

  4. 4
