Ingredients

  • 500 g shrimp
  • 4 bell pepper
  • 1 cup quinoa
  • 2 cups frozen mixed vegetables
  • 1 tbsp olive oil
  • 2 cloves garlic
  • 2 tbsp lemon juice
  • salt — to taste
  • black pepper — to taste

Instructions

    Preheat oven to 375°F (190°C).

    Cook quinoa according to package instructions.

    While quinoa is cooking, halve the bell peppers and remove seeds.

    In a large pan, heat olive oil over medium heat. Add minced garlic and sauté until fragrant.
