Ingredients
For 4 servings
- 4 sweet potato
- 2 chicken breast
- 1 yellow onion
- 2 clove garlic
- 2 cups cheddar cheese
- 1 cup heavy cream
- 1 cup milk
- 2 tablespoons butter
- 2 tablespoons all-purpose flour
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon thyme
Instructions
- 1
Preheat the oven to 375°F (190°C).
- 2
Peel and slice the sweet potatoes into 1/4-inch rounds.
- 3
Thinly slice the onion and mince the garlic cloves.
- 4
Heat olive oil in a pan over medium heat. Add the sliced onion and minced garlic, cooking until the onion is soft.
- 5
In the same pan, add chicken breasts and cook for about 6-7 minutes per side until cooked through. Remove and let cool, then shred into bite-sized pieces.
- 6
In a saucepan, melt the butter over medium heat. Whisk in the flour and cook for 1-2 minutes until lightly golden.
- 7
Gradually whisk in the heavy cream and milk, stirring constantly until the sauce thickens. Add the salt, black pepper, and thyme.
- 8
Grease a 9x13 inch baking dish. Layer half of the sweet potatoes on the bottom, followed by half of the shredded chicken and half of the onion mixture. Pour over half of the cream sauce.
- 9
Repeat the layering with the remaining sweet potatoes, chicken, and onions, and pour the remaining cream sauce over the top.
- 10
Sprinkle the cheddar cheese evenly over the top layer.
- 11
Cover the dish with aluminum foil and bake for 30 minutes. Remove the foil and bake for an additional 15 minutes, or until the cheese is golden brown and bubbly.
- 12
Let the gratin cool for 10 minutes before serving.
