Ingredients

- 400 g firm tofu
- 2 tbsp olive oil
- 1 onion
- 3 clove garlic
- 1 red bell pepper
- 300 g frozen mixed vegetables
- 400 ml coconut milk
- 2 tbsp curry powder
- salt — to taste
- black pepper — to taste
- 4 cups cooked brown rice

Drain and press the tofu to remove excess water, then cut it into cubes.
