  • 1.5 cups brown rice
  • 2 tablespoons olive oil
  • 1 yellow onion
  • 3 cloves garlic
  • 2 carrot
  • 2 celery stalk
  • 1 green bell pepper
  • 1 28-ounce can canned diced tomatoes
  • 4 cups vegetable broth
  • 1 cup brown lentils
  • 1 bay leaf
  • 1 teaspoon dried thyme
  • 1 teaspoon ground cumin
  • 0.5 teaspoon black pepper
  • 1 teaspoon salt
  • 1 cup sauerkraut
  • 0.25 cup fresh parsley

Instructions

    Rinse brown rice under cold water. In a medium saucepan, bring 3 cups of water to a boil. Add the rice, reduce the heat to low, cover, and simmer for 40-45 minutes until tender.

    Meanwhile, heat olive oil in a large pot over medium heat. Dice the onion, mince the garlic, and add them to the pot, sautéing for 3-4 minutes until fragrant.

    Chop the carrots, celery, and green bell pepper. Add them to the pot and cook for another 5 minutes, stirring occasionally.

    Add the diced tomatoes, vegetable broth, lentils, bay leaf, thyme, cumin, black pepper, and salt to the pot. Stir to combine.
