- 1 cup water
- 1 teaspoon baking powder
- 2 tablespoons olive oil
- 1 cup spinach
- 1 carrot
- 1/4 red onion
- 1 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper

Preheat oven to 375°F (190°C).

Lightly grease a mini muffin tin with olive oil or line with muffin liners.

In a medium bowl, whisk together chickpea flour, water, baking powder, olive oil, garlic powder, salt, and black pepper until smooth.
