Ingredients

- 2 cups Greek yogurt
- 4 tablespoons chia seeds
- 1 cup milk
- 2 tablespoons honey
- 1 cup mixed berries
- 1 tablespoon lemon juice
- 1 teaspoon vanilla extract
- 2 tablespoons water

In a bowl, combine chia seeds, milk, and 1 tablespoon of honey. Stir well and refrigerate for 15 minutes, stirring once halfway through.

While the chia pudding sets, in a small saucepan over medium heat, combine mixed berries, lemon juice, and water. Cook for 5-6 minutes until berries are soft and syrupy.

Remove the berry compote from heat and let it cool slightly.

In another bowl, mix Greek yogurt with vanilla extract and the remaining honey.
