Ingredients

For 4 servings

  • 200 grams linguine
  • 400 grams shrimp
  • 1 lemon
  • 3 cloves garlic
  • 3 tablespoons olive oil
  • 2 tablespoons butter
  • 50 grams parmesan cheese
  • 2 tablespoons parsley
  • salt — to taste
  • black pepper — to taste
  • red pepper flakes — to taste

Instructions

  1. 1

Cook linguine in a large pot of salted boiling water until al dente, about 8 minutes. Drain and set aside, reserving 1/2 cup of pasta water.

  2. 2

While pasta cooks, season shrimp with salt and black pepper.

  3. 3

In a large skillet over medium heat, add olive oil and butter. Once melted, add minced garlic and sauté for about 1 minute until fragrant, being careful not to burn.

  4. 4

Add shrimp to the skillet and cook for 2-3 minutes on each side, or until opaque and cooked through.

  5. 5

Zest and juice the lemon, then add both the zest and juice to the skillet. Sprinkle in red pepper flakes, then toss everything to combine.

  6. 6

Add the cooked linguine to the skillet along with a splash of reserved pasta water, tossing to coat the pasta evenly with the sauce.

  7. 7

Stir in freshly grated parmesan cheese and chopped parsley, then adjust seasoning with salt and black pepper as needed.

  8. 8

Serve immediately, garnished with additional parsley and parmesan if desired.
