Ingredients

- 600 g chicken thigh
- 2 tablespoons olive oil
- 1 onion
- 2 cloves garlic
- 2 carrot
- 1 cup frozen peas
- 1.5 cups long-grain rice
- 3 cups chicken broth
- 400 g canned diced tomatoes
- 1 teaspoon dried thyme
- 1 teaspoon salt
- 0.5 teaspoon black pepper
- 150 g cheddar cheese

Preheat oven to 180°C (350°F).

Season chicken thighs with salt and pepper.

Heat olive oil in a large oven-safe pan over medium heat.

Add chicken thighs and brown on all sides, about 5-7 minutes. Remove and set aside.

In the same pan, add diced onion and minced garlic, and sauté until fragrant and translucent, about 3 minutes.
