  • 4 red bell pepper
  • 1 cup brown rice
  • 2 cups frozen mixed vegetables
  • 2 tablespoons soy sauce
  • 1 tablespoon olive oil
  • 2 cloves garlic
  • 1 onion
  • black pepper — to taste
  • salt — to taste

    Preheat the oven to 375°F (190°C).

    Cook the brown rice according to package instructions.

    Slice the tops off the bell peppers and remove the seeds, then place them on a baking sheet.
