- 4 russet potato
- 400 grams tempeh
- 120 grams spinach
- 120 grams low-fat Greek yogurt
- 2 green onion
- 1 tablespoon olive oil
- 1 teaspoon garlic powder
- 1 teaspoon salt
- 0.5 teaspoon black pepper

Preheat oven to 400°F (200°C).

Wash potatoes and pierce with a fork several times. Bake directly on an oven rack for 45 minutes or until tender.

While potatoes bake, crumble tempeh into a pan with olive oil over medium heat. Cook for 5 minutes.

Add spinach to the pan and cook until wilted, about 2 minutes.

Remove potatoes from oven and let cool slightly. Cut each potato in half lengthwise and scoop out flesh, leaving a 1/4-inch shell.
