Ingredients
For 4 servings
- 1 cup bulgur
- 2 cups water
- 1 cucumber
- 2 tomato
- 0.5 bunch parsley
- 0.5 bunch mint leaves
- 2 green onion
- 1 lemon
- 3 tablespoons extra-virgin olive oil
- salt — to taste
- black pepper — to taste
Instructions
- 1
In a medium saucepan, bring 2 cups of water to a boil. Add the bulgur, stir, cover, and remove from heat. Let it sit for 10 minutes or until the bulgur is tender and the water is absorbed.
- 2
While the bulgur is soaking, dice the cucumber and tomatoes. Chop the parsley, mint leaves, and green onions finely.
- 3
Juice the lemon and mix the juice with olive oil, salt, and black pepper to taste in a small bowl to create the dressing.
- 4
Fluff the bulgur with a fork. In a large mixing bowl, combine the bulgur, diced cucumber, tomatoes, chopped herbs, and green onions.
- 5
Pour the lemon-olive oil dressing over the salad and toss well to combine. Adjust seasoning with salt and pepper if needed.
- 6
Serve immediately or refrigerate for a few hours to allow flavors to meld.
