Ingredients

- 2 sweet potato
- 500 g ground beef
- 2 tbsp olive oil
- 1 onion
- 2 clove garlic
- 300 g frozen mixed vegetables
- 2 tbsp tomato paste
- 250 ml beef broth
- 1 tsp dried thyme
- salt — to taste
- black pepper — to taste
- 100 g cheddar cheese

Preheat the oven to 200°C (400°F).

Peel and dice the sweet potatoes. Boil them in a pot of salted water for about 10-12 minutes until tender. Drain and set aside.

In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the chopped onion and minced garlic, sauté until soft.

Add ground beef to the skillet, cooking until browned. Drain any excess fat.

Stir in the frozen mixed vegetables, tomato paste, beef broth, dried thyme, salt, and pepper. Simmer for 5 minutes until slightly thickened.
