Sesame Tofu and Broccoli Rice

   Use a 1000-watt microwave; all heating below uses HIGH (100% power). Drain and pat the tofu dry, then cut into 2 cm cubes. Peel and finely chop the garlic. Use plain white rice and frozen broccoli in small florets.

   In a small bowl, whisk the cornstarch with 60 ml water until smooth. Stir in the soy sauce, sesame oil, rice vinegar, brown sugar and garlic.

   Place the tofu and frozen broccoli in a wide 3-litre microwave-safe dish. Pour over the sauce and gently mix. Cover with a microwave-safe vented lid and microwave for 5 minutes. Carefully uncover away from your face, stir thoroughly from the edges into the centre, and rotate the dish halfway around.

   Cover and microwave for another 5 minutes. Stir and rotate again, then continue in 2-minute intervals, stirring after each, until the broccoli is tender, the sauce is bubbling and glossy, and a food thermometer reads at least 165°F/74°C in several places, including the centre. Expect approximately 12–14 minutes total heating, allowing longer if needed. Stir and leave covered to stand for at least 2 minutes while heating the rice.

   Cook the white rice in the microwave according to the package directions, using the remaining 60 ml water as part of the cooking water. Leave covered to stand as directed, then fluff with a fork.

   Divide the rice among four bowls. Stir the tofu and broccoli sauce once more, spoon it over the rice and sprinkle evenly with the sesame seeds.
