Ingredients
For 4 servings
- 600 g ground turkey
- 8 flour tortilla
- 80 g cheddar cheese
- 120 g lettuce
- 200 g tomato
- 120 g salsa
- 2 tsp vegetable oil
- 2 tsp ground cumin
- 1 tsp paprika
- 1 tsp garlic powder
- 0.5 tsp salt
- 0.25 tsp black pepper
- 60 ml water
Instructions
- 1
Use ready-to-eat soft flour tortillas, about 40 g each, at room temperature, and preferably 93% lean ground turkey. Wash and dry the lettuce and tomato, then shred the lettuce, dice the tomato and grate the cheddar. Keep these toppings cold.
- 2
Add the oil to a deep 30 cm skillet and preheat over medium-high heat for 2 minutes. Leave the skillet uncovered throughout cooking.
- 3
Add the turkey and cook for 8–9 minutes, breaking it into small crumbles and stirring regularly.
- 4
Reduce the heat to medium. Stir in the cumin, paprika, garlic powder, salt and pepper for 1 minute. Add the salsa and 60 ml water, then simmer uncovered for 2 minutes, stirring, until the sauce clings to the turkey without pooled liquid. Check several places with a food thermometer: the turkey must reach 165°F/74°C.

Turn off the heat. Using a serving spoon, divide the filling among the eight ready-to-eat tortillas. Add the cold lettuce, tomato and cheddar, and serve two generously filled tacos per person.
