Ingredients

  • 1 cup white rice
  • 1 cup dried lentils
  • 1 tablespoon vegetable oil
  • 1 onion
  • 2 cloves garlic
  • 1 14 oz can canned diced tomatoes
  • 3 cups water
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

    Rinse the rice and lentils separately under cold water.

    Chop the onion and mince the garlic.

    In a large skillet, heat the vegetable oil over medium heat.

    Add the onion and garlic, and sauté until the onion is translucent, about 3 minutes.

    Add the rice and lentils to the skillet, stirring to coat with the onion mixture.
