Ingredients

  • 400 grams shrimp
  • 2 tablespoons red curry paste
  • 400 milliliters coconut milk
  • 1 red bell pepper
  • 1 carrot
  • 1 zucchini
  • 1 onion
  • 2 cloves garlic
  • 1 tablespoon ginger
  • 1 tablespoon fish sauce
  • 1 tablespoon lime juice
  • 2 tablespoons vegetable oil
  • 2 cups jasmine rice
  • 4 cups water
  • 10 basil leaves
  • 1 teaspoon sugar

Instructions

    Rinse the shrimp under cold water and pat dry. Set aside.

    Cook the jasmine rice according to package instructions using 2 cups of rice and 4 cups of water.

    In a large pan, heat vegetable oil over medium heat. Add chopped onion, minced garlic, and grated ginger. Sauté for 2 minutes until fragrant.

    Add red curry paste to the pan and cook for another minute, stirring constantly.

    Pour in coconut milk and bring to a simmer.
