Ingredients

  • 400 g salmon fillet
  • 3 tbsp olive oil
  • 200 g cherry tomato
  • 1 cucumber
  • 1/2 red onion
  • 50 g kalamata olives
  • 100 g feta cheese
  • 2 tbsp lemon juice
  • salt — to taste
  • black pepper — to taste
  • 200 g mixed greens

Instructions

    Preheat a non-stick pan over medium heat and add 1 tablespoon of olive oil.

    Season salmon fillet with salt and pepper, then place it skin-side down in the pan. Cook for 3-4 minutes on each side until fully cooked through. Remove from heat and let it rest.

    While the salmon is cooking, halve the cherry tomatoes, dice the cucumber, thinly slice the red onion, and chop the kalamata olives.

    In a large salad bowl, combine mixed greens, cherry tomatoes, cucumber, red onion, and olives.
