- 400 g salmon fillet
- 3 tbsp olive oil
- 200 g cherry tomato
- 1 cucumber
- 1/2 red onion
- 50 g kalamata olives
- 100 g feta cheese
- 2 tbsp lemon juice
- salt — to taste
- black pepper — to taste
- 200 g mixed greens

Preheat a non-stick pan over medium heat and add 1 tablespoon of olive oil.

Season salmon fillet with salt and pepper, then place it skin-side down in the pan. Cook for 3-4 minutes on each side until fully cooked through. Remove from heat and let it rest.
