Ingredients

For 4 servings

  • 500 g lean ground beef
  • 8 eggs
  • 200 g spinach
  • 1 bell pepper
  • 1 onion
  • 2 clove garlic
  • 2 tbsp olive oil
  • salt — to taste
  • black pepper — to taste
  • 50 g parmesan cheese

Instructions

  1. 1

    Preheat oven to 375°F (190°C).

  2. 2

Heat 1 tablespoon of olive oil in a large oven-safe skillet over medium-high heat.

  3. 3

Add chopped onion and minced garlic, sauté until onion is translucent, about 3 minutes.

  4. 4

Add ground beef to the skillet, cooking until browned and fully cooked, about 5-7 minutes.

  5. 5

Season with salt and black pepper to taste, and drain any excess fat.

  6. 6

Add chopped bell pepper and spinach to the beef mixture, cooking for an additional 2-3 minutes until spinach is wilted.

  7. 7

In a large bowl, whisk together eggs with a pinch of salt and pepper, then pour over the beef and vegetable mixture in the skillet.

  8. 8

Sprinkle grated parmesan cheese evenly over the top.

  9. 9

Transfer skillet to the preheated oven and bake for 15-20 minutes, or until eggs are set and top is slightly golden.

  10. 10

Remove from oven and let cool slightly before slicing into wedges to serve.
