Ingredients

For 4 servings

  • 1.5 cups brown rice
  • 3 cups water
  • 1 can black beans
  • 1 cup corn kernels
  • 1 red bell pepper
  • 1 green bell pepper
  • 1 onion
  • 2 cloves garlic
  • 2 tablespoons olive oil
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • salt — to taste
  • black pepper — to taste
  • 1 avocado
  • 1 lime
  • 1/4 cup fresh cilantro
  • 1 cup cheddar cheese
  • 1/2 cup sour cream

Instructions

    Rinse the brown rice under cold water, then combine with 3 cups of water in a pot. Bring to a boil, reduce heat to low, cover, and simmer for 40-45 minutes until the rice is tender.

    While the rice is cooking, drain and rinse the black beans. Set aside.

    Dice the red and green bell peppers, and onion. Mince the garlic cloves.

    In a large skillet, heat olive oil over medium heat. Add the onion and garlic, sauté for 2-3 minutes until fragrant.

    Add the diced bell peppers to the skillet and continue to sauté for another 5-7 minutes until the peppers are soft.

    Stir in the black beans, corn kernels, cumin, chili powder, salt, and black pepper. Cook for another 5 minutes to heat through and blend flavors.

    Halve, pit, and dice the avocado. Squeeze lime juice over the avocado to prevent browning.

    Once the rice is done, fluff with a fork and distribute evenly in four bowls.

    Top each bowl with the sautéed vegetable and bean mixture, diced avocado, shredded cheddar cheese, a dollop of sour cream, and garnish with fresh cilantro.
