Ingredients

- 1 onion
- 1 carrot
- 1 celery stalk
- 3 clove garlic
- 14 ounce canned diced tomatoes
- 4 cup vegetable broth
- 15 ounce canned cannellini beans
- 8 ounce dried pasta
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- salt — to taste
- black pepper — to taste
- fresh parsley — to taste
Instructions

Heat olive oil in a large pot over medium heat.

Chop the onion, carrot, and celery, and add to the pot. Sauté for 5 minutes until soft.

Mince the garlic and add to the pot, cooking for 1 minute until fragrant.

Add the canned diced tomatoes, vegetable broth, drained and rinsed cannellini beans, dried oregano, and dried basil to the pot. Stir to combine.
