Ingredients

For 4 servings

  • 2 cups brown lentils
  • 4 cups baby spinach
  • 1 onion
  • 2 cloves garlic
  • 1 cup canned diced tomatoes
  • 1 cup shredded mozzarella cheese
  • 1/4 cup parmesan cheese
  • 1 tablespoon olive oil
  • salt — to taste
  • black pepper — to taste

Instructions

    Preheat oven to 400°F (200°C).

    Rinse lentils under cold water, then cook in a pot with 4 cups of water until tender, about 15 minutes. Drain and set aside.

    While lentils cook, finely chop the onion and mince the garlic.

    In a large skillet, heat olive oil over medium heat. Add onion and garlic, sauté until soft, about 3 minutes.

    Stir in baby spinach and cook until wilted, about 2 minutes.

    Add cooked lentils and canned diced tomatoes to the skillet, season with salt and black pepper, then mix well.
