Ingredients

- 2 cups brown lentils
- 4 cups baby spinach
- 1 onion
- 2 cloves garlic
- 1 cup canned diced tomatoes
- 1 cup shredded mozzarella cheese
- 1/4 cup parmesan cheese
- 1 tablespoon olive oil
- salt — to taste
- black pepper — to taste
Instructions

Preheat oven to 400°F (200°C).

Rinse lentils under cold water, then cook in a pot with 4 cups of water until tender, about 15 minutes. Drain and set aside.

While lentils cook, finely chop the onion and mince the garlic.

In a large skillet, heat olive oil over medium heat. Add onion and garlic, sauté until soft, about 3 minutes.
