Ingredients

- 400 g tempeh
- 4 whole wheat tortillas
- 1 cup frozen corn
- 1 red bell pepper
- 2 tablespoons fresh lime juice
- 400 g canned black beans
- 1 teaspoon chili powder
- 1 teaspoon cumin powder
- 1 tablespoon olive oil
- salt — to taste
- black pepper — to taste
- 1/4 cup fresh cilantro

Dice the tempeh into small cubes. Heat olive oil in a large skillet over medium-high heat.

Add the tempeh to the skillet and cook for 5 minutes until golden brown, stirring occasionally.

Dice the red bell pepper and add it to the skillet with the frozen corn. Stir and cook for another 3 minutes.

Rinse and drain the black beans; add them to the skillet along with chili powder, cumin powder, lime juice, salt, and black pepper. Stir well to combine, then allow to heat through for 2-3 minutes.
