Ingredients

For 4 servings

  • 400 g chicken breast
  • 1 red bell pepper
  • 200 g broccoli florets
  • 1 carrot
  • 150 g green beans
  • 1 lime
  • 2 tablespoons soy sauce
  • 2 cloves garlic
  • 1 teaspoon ginger
  • 1 tablespoon olive oil
  • 1 teaspoon cornstarch
  • 2 tablespoons water
  • salt — to taste
  • black pepper — to taste

Instructions

  1. 1

Slice the chicken breast into thin strips and season with salt and pepper.

  2. 2

In a small bowl, whisk together soy sauce, lime juice, cornstarch, and water. Set aside.

  3. 3

Heat olive oil in a large pan over medium-high heat.

  4. 4

Add minced garlic and ginger to the pan, sauté for 30 seconds until fragrant.

  5. 5

Add the chicken strips and cook until browned and fully cooked, about 5-6 minutes. Remove from the pan and set aside.

  6. 6

Add sliced bell pepper, broccoli florets, sliced carrot, and green beans to the pan. Stir-fry for 4 minutes until vegetables are tender-crisp.

  7. 7

Return the chicken to the pan, pour in the lime-soy sauce mixture, and stir well to coat.

  8. 8

Cook for an additional 2 minutes until the sauce thickens slightly.

  9. 9

Serve the stir-fry warm with a wedge of lime for an extra zesty flavor.
