- 2 cups spinach
- 1 red bell pepper
- 1 onion
- 1 cup cheddar cheese
- 2 tablespoons olive oil
- salt — to taste
- black pepper — to taste

Crack the eggs into a bowl, and whisk until well combined. Season with salt and black pepper to taste.

Chop the red bell pepper and onion into small, even pieces.

Heat 1 tablespoon of olive oil in a large non-stick skillet over medium heat.

Add the chopped onion and red bell pepper to the skillet, and sauté for 3-4 minutes until softened.
