Ingredients

  • 8 eggs
  • 2 cups spinach
  • 1 red bell pepper
  • 1 onion
  • 1 cup cheddar cheese
  • 2 tablespoons olive oil
  • salt — to taste
  • black pepper — to taste

Instructions

    Crack the eggs into a bowl, and whisk until well combined. Season with salt and black pepper to taste.

    Chop the red bell pepper and onion into small, even pieces.

    Heat 1 tablespoon of olive oil in a large non-stick skillet over medium heat.

    Add the chopped onion and red bell pepper to the skillet, and sauté for 3-4 minutes until softened.

    Add the spinach to the skillet and cook for another 1-2 minutes until wilted. Remove the vegetables and set aside.

    Add the remaining 1 tablespoon of olive oil to the skillet and pour in the whisked eggs.
