  • 2 tablespoons olive oil
  • 1 onion
  • 3 cloves garlic
  • 1 jalapeño
  • 14.5 ounces canned diced tomatoes
  • 6 cups chicken broth
  • 1 teaspoon ground cumin
  • 1 teaspoon dried oregano
  • salt — to taste
  • black pepper — to taste
  • 4 corn tortillas
  • 1 lime
  • 0.25 cup cilantro
  • 1 avocado
  • 0.5 cup cheddar cheese

    Preheat oven to 375°F (190°C).

    Slice corn tortillas into thin strips, place on a baking sheet, drizzle with 1 tablespoon olive oil, and bake for 10-12 minutes until crispy.
