- 1 yellow onion
- 3 cloves garlic
- 1 can (15 oz) chickpeas
- 1 can (14 oz) diced tomatoes
- 2 cups vegetable broth
- 1 teaspoon cumin
- 1 teaspoon coriander
- 1 teaspoon smoked paprika
- 4 cups baby spinach
- 1 lemon
- salt — to taste
- black pepper — to taste
