- 2 cups red lentils
- 1 onion
- 3 cloves garlic
- 1 tablespoon ginger
- 1 can canned diced tomatoes
- 1 cup coconut milk
- 2 cups vegetable broth
- 2 tablespoons curry powder
- 1 teaspoon ground cumin
- 1 teaspoon cayenne pepper
- 4 cups spinach
- 1 tablespoon olive oil
- salt — to taste
- black pepper — to taste

Instructions

Rinse the red lentils under cold water until the water runs clear and set aside.

Finely chop the onion, mince the garlic and ginger.
