- 1 pound chicken thigh
- 2 tablespoon olive oil
- 1 onion
- 3 clove garlic
- 2 carrot
- 2 stalk celery
- 4 cup chicken broth
- 1 can diced tomatoes
- 1 bay leaf
- 1 teaspoon dried thyme

Peel and cube the sweet potatoes. Set aside.

Heat olive oil in a large pot over medium heat. Add chicken thighs and cook until browned on all sides, about 5-7 minutes per side. Remove from pot and set aside.
