- 400 g tempeh
- 400 ml coconut milk
- 300 g frozen mixed vegetables
- 2 tbsp curry powder
- 2 tbsp soy sauce
- 1 tbsp vegetable oil
- 2 cloves garlic
- 1 tbsp ginger
- 1 lime
- fresh cilantro — to taste
- salt — to taste
- black pepper — to taste
- 200 g basmati rice
Instructions

Cook basmati rice according to package instructions.

While the rice is cooking, cut the tempeh into cubes.
