  • 4 salmon fillet
  • 1 lemon
  • 2 tablespoons fresh dill
  • 3 tablespoons olive oil
  • salt — to taste
  • black pepper — to taste
  • 1 cup quinoa
  • 2 cups water
  • 1 cup cherry tomatoes
  • 1 cucumber
  • 0.5 red onion
  • 1 red bell pepper
  • 0.5 cup feta cheese
  • 2 tablespoons parsley

    Preheat the oven to 375°F (190°C).

    Rinse the salmon fillets under cold water and pat dry with paper towels.

    Slice the lemon into thin rounds. Place the salmon fillets on a baking sheet lined with parchment paper.
