Ingredients
For 4 servings
- 250 g couscous
- 500 ml reduced-fat milk
- 400 g apple
- 15 g butter
- 25 g brown sugar
- 1 teaspoon ground cinnamon
Instructions
- 1
Wash and core the apples, then cut into small pieces about 1 cm across. Use ordinary dry, quick-cooking couscous for this recipe, not pearl couscous.
- 2
Melt the butter in a medium saucepan over medium-low heat. Add the apple and cook for 7–8 minutes, stirring occasionally, until softened.
- 3
Stir in the brown sugar and cinnamon for 30 seconds. Pour in the milk and bring to a gentle simmer over medium heat, stirring frequently to prevent scorching; this takes about 3–4 minutes.
- 4
Remove the saucepan from the heat, stir in the couscous and cover tightly. Leave for 5 minutes, until the couscous is tender and the milk is absorbed.
- 5
Gently loosen the couscous with a fork, mixing the apple through it. Divide between four bowls and serve warm.
