Ingredients

- 800 g cod fillets
- 1 cup quinoa
- 2 cups water
- 1 avocado
- 2 tbsp lime juice
- 1 clove garlic
- 1/4 cup cilantro
- 2 tbsp olive oil
- salt — to taste
- pepper — to taste
- 1 tsp smoked paprika
- 1 tsp cumin
- 3 cups mixed salad greens
- 1 cup cherry tomatoes
- 1/2 red onion

Rinse quinoa under cold water. In a saucepan, combine quinoa and water. Bring to a boil, then reduce heat to low and cover. Cook for 15 minutes or until liquid is absorbed. Remove from heat and let sit for 5 minutes, then fluff with a fork.

While quinoa cooks, prepare the avocado dressing. In a blender, combine avocado, lime juice, garlic, cilantro, and 1 tablespoon olive oil. Blend until smooth, adding water if needed to reach desired consistency. Season with salt and pepper to taste.

Pat cod fillets dry with paper towels and season both sides with salt, pepper, smoked paprika, and cumin.

In a large skillet, heat remaining olive oil over medium-high heat. Add cod fillets and cook for 3-4 minutes per side or until fish is opaque and flakes easily with a fork.
