Ingredients

- 2 cups chickpeas
- 2 tablespoons olive oil
- 1 red bell pepper
- 1 zucchini
- 1 red onion
- 3 cloves garlic
- 2 cups baby spinach
- 1 teaspoon cumin
- 1 teaspoon paprika
- salt — to taste
- black pepper — to taste
- 1 lemon
- 1 cup quinoa
- 2 cups water
- 1 cup plain yogurt

Rinse the quinoa under cold water. In a medium saucepan, bring 2 cups of water to a boil. Add quinoa, reduce the heat to low, cover, and cook for 15 minutes or until water is absorbed. Fluff with a fork.

While the quinoa is cooking, drain and rinse the chickpeas. Set aside.

Chop the red bell pepper, zucchini, and red onion into bite-sized pieces. Mince the garlic cloves.

In a large pan, heat olive oil over medium heat. Add the red onion and garlic, sauté for 2-3 minutes until fragrant.
