  • 2 cans chickpeas
  • 1 cup quinoa
  • 2 tablespoons olive oil
  • 1 onion
  • 1 red bell pepper
  • 3 cloves garlic
  • 2 cans canned diced tomatoes
  • 2 cups vegetable broth
  • 2 tablespoons chili powder
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 0.5 cup cilantro
  • 1 lime

Instructions

    Rinse and drain the chickpeas; set aside.

    Rinse the quinoa under cold water; set aside.

    Chop the onion and red bell pepper; mince the garlic.

    Heat olive oil in a large pot over medium heat.
