Ingredients

For 4 servings

  • 300 g pasta
  • 1 400g can canned chickpeas
  • 1 400g can canned diced tomatoes
  • 1 onion
  • 2 cloves garlic
  • 2 tbsp olive oil
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • salt — to taste
  • black pepper — to taste

Instructions

  1. 1

Cook the pasta according to package instructions, then drain and set aside.

  2. 2

While the pasta is cooking, dice the onion and mince the garlic.

  3. 3

Heat olive oil in a large pan over medium heat. Add diced onion and sauté until translucent, about 3-4 minutes.

  4. 4

Add minced garlic to the pan and sauté for another 1 minute, until fragrant.

  5. 5

Rinse and drain the canned chickpeas, then add them to the pan along with the canned diced tomatoes, dried oregano, and dried basil. Stir to combine.

  6. 6

Season with salt and black pepper to taste and let the mixture simmer for about 5 minutes, stirring occasionally.

  7. 7

Add the cooked pasta to the pan and toss until pasta is well coated with the sauce.

  8. 8

Serve hot, garnished with a sprinkle of dried herbs if desired.
