Ingredients

  • 800 g potato
  • 200 g dried green lentils
  • 1 onion
  • 2 tbsp vegetable oil
  • 2 cloves garlic
  • 500 ml water
  • 1 vegetable stock cube
  • 1 tsp dried thyme
  • salt — to taste
  • black pepper — to taste
  • 100 g cheddar cheese

Instructions

    Rinse the potatoes and chop them into small cubes.

    Rinse the lentils under cold water and set aside.

    Dice the onion and mince the garlic.

    In a large skillet, heat the vegetable oil over medium heat.

    Add the onion and garlic to the skillet, sautéing for 3-4 minutes until softened.

    Add the chopped potatoes to the skillet and cook for another 5 minutes, stirring occasionally.
