- 400 g tempeh
- 4 bell pepper
- 2 cups cooked brown rice
- 1 cup canned black beans
- 1 cup tomato sauce
- 1 cup frozen corn
- 1 teaspoon ground cumin
- 1 teaspoon paprika
- salt — to taste
- black pepper — to taste
- 1 tablespoon olive oil
- 1 cup shredded cheddar cheese
Instructions

Preheat oven to 375°F (190°C).

Slice the tops off the bell peppers and remove the seeds and membranes.

Crumble the tempeh into small pieces.

In a large skillet, heat olive oil over medium heat. Add crumbled tempeh and cook for 3-4 minutes until slightly browned.
