Ingredients

- 4 cups black beans
- 2 tablespoons olive oil
- 1 onion
- 1 bell pepper
- 1 zucchini
- 3 cloves garlic
- 1 teaspoon cumin
- 1 teaspoon paprika
- salt — to taste
- black pepper — to taste
- 1 lime
- cilantro — to taste
Instructions

Drain and rinse the black beans and set aside.

Finely chop the onion, bell pepper, and zucchini. Mince the garlic cloves.

Heat 1 tablespoon of olive oil in a large pan over medium heat. Add the onion and garlic, and sauté for 2-3 minutes until softened.

Add the bell pepper and zucchini to the pan and cook for another 4-5 minutes until the vegetables are tender. Season with salt and black pepper to taste, then remove the veggies from the pan and set aside.

In the same pan, add another tablespoon of olive oil and the black beans. Stir in the cumin and paprika, and cook for 2 minutes until the beans are heated through.
