Ingredients

For 4 servings

  • 1 cup white rice
  • 1 cup dried lentils
  • 2 carrot
  • 1 onion
  • 2 tablespoons vegetable oil
  • 2 cloves garlic
  • 5 cups water
  • 1 stock cube
  • salt — to taste
  • black pepper — to taste
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano

Instructions

  1. 1

Rinse the white rice and lentils under cold water until the water runs clear.

  2. 2

Peel and dice the carrots and the onion. Mince the garlic cloves.

  3. 3

Heat the vegetable oil in a large pot over medium heat. Add the onion and garlic, and sauté until the onion is translucent, about 5 minutes.

  4. 4

Add the diced carrots to the pot and cook for another 3 minutes, stirring occasionally.

  5. 5

Add the rinsed lentils, rice, water, and stock cube to the pot. Stir in the dried thyme, dried oregano, salt, and black pepper.

  6. 6

Bring the mixture to a boil, then reduce the heat to low. Cover and let it simmer for 25-30 minutes, or until the rice and lentils are tender.

  7. 7

Adjust seasoning with salt and pepper to taste before serving.
