Ingredients

- 2 cup white rice
- 3 cup water
- 2 tablespoon vegetable oil
- 1 onion
- 2 carrot
- 1 cup frozen peas
- 3 egg
- 2 tablespoon soy sauce
- salt — to taste
- black pepper — to taste

Rinse the white rice under cold water to remove excess starch.

In a medium pot, bring the water to a boil. Add the rice, reduce heat to low, cover, and simmer for 15 minutes or until the rice is cooked.

While the rice is cooking, finely chop the onion and dice the carrots.

In a large pan, heat the vegetable oil over medium heat. Add the onion and carrots, and stir-fry for 5 minutes until they begin to soften.

Add the frozen peas and continue to cook for another 2 minutes.

Push the vegetables to one side of the pan and crack the eggs into the empty space. Scramble the eggs until fully cooked, then mix with the vegetables.

Add the cooked rice to the pan and mix everything together.
