Ingredients

For 4 servings

  • 1 cup red lentils
  • 2 cup water
  • 1 carrot
  • 2 green onion
  • 2 clove garlic
  • 1/4 cup flour
  • 1 teaspoon cumin
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoon olive oil

Instructions

  1. 1

Rinse the red lentils under cold water and drain.

  2. 2

In a medium saucepan, combine the lentils and water. Bring to a boil, then reduce the heat and simmer for about 10 minutes until soft. Drain excess water.

  3. 3

While the lentils cook, grate the carrot, chop the green onions, and mince the garlic.

  4. 4

In a large mixing bowl, combine cooked lentils, grated carrot, chopped green onions, minced garlic, flour, cumin, salt, and black pepper. Mix well to form a batter.

  5. 5

Heat olive oil in a large non-stick skillet over medium heat.

  6. 6

Spoon the lentil mixture into the skillet, forming patties. Cook for 3-4 minutes on each side until golden brown and crispy.

  7. 7

Remove from the skillet and drain on paper towels before serving.
